The Story


Maple Shack’s roasted caramel malt creates the perfect background that lets a subtle hint of Canadian maple syrup shine through. In summer, try this one with BBQ ribs. In winter, break it out with roast beef or add it to a slow-cooked chili.

Grilled Garlic Cheese & Parsley Baguette
Ingredients
Baguette Bread (1/2 inch thick on a bias)
4 slices
Salted butter
12 tablespoons
Garlic cloves
3
Chopped parsley
1/4 cup
Ground black pepper
1/2 teaspoon
Grated parmesan
1/4 cup
Method
Serves: 4
In a food processor mix all ingredients together (except bread). Spread Butter
mixture on both sides of the bread slices. Place bread slices on the grill (or BBQ) for 1
to 3 min on either side or until golden.

Smoked Paprika Salmon
Ingredients
Wild BC Sockeye Salmon (filet)
4 x 6oz portions
Smoked paprika
2 tablespoons
Brown sugar
2 tablespoons
Salt
1 teaspoon
Onion powder
1 teaspoon
Method
Serves: 4
Blend all dry ingredients together to make a rub. Rub the side of salmon with the dry seasoning mixture. Let sit for ten minutes while grill/oven is heating up. Cook directly on grill for 10 to 12 min at med-high heat.

White Chocolate Shortbread
Ingredients
White chocolate
60 grams (1/2 cup)
Cranberries
40 grams (5 1/4 tablespoons)
Unsalted butter
150 grams (3/4 cups)
Salt
2 grams (1/2 teaspoon)
Lemon zest
1/2 lemon
Sugar
60 grams (4 3/4 tablespoons)
Pastry flour
180 grams (1 1/4 cup)
All purpose flour
60 grams (1/2 cup)
Method
Serves: 4
Mix the following dried ingredients together (salt, lemon zest, sugar). Add butter and cream together for 5 minutes. Add flour and mix until combined. Add white chocolate and cranberries. Let rest in the fridge for 30 minutes. Roll to ½ inch thick and cut using a round/oval cutter. Bake in a pre-heated oven @ 325F for 18 minutes or until a light golden brown.
